Spat Collection
It all begins with spat — baby oysters. In spring, adult oysters release their larvae into the water. These larvae attach to supports called collectors.
Early Growing: The First Months
Young oysters are placed in oyster bags — mesh crates raised on metal tables in the lagoon.
Open Water Farming
Oysters are filter feeders: they filter between 150 and 200 litres of water per day. This 100% natural diet gives each oyster the unique taste of its terroir.
Turning
Every 2 to 3 weeks, Martine turns the bags by hand. This crucial gesture develops a denser, firmer flesh.
Finishing and Sorting
After 18 to 24 months, oysters are sorted by size according to the French numbering system (N°5 to N°1). Martine mainly offers N°3 and N°2.
The oysters are then stored in purification tanks for 24 to 48 hours, then packed in traditional wooden baskets, ready to be enjoyed.
