The Beginnings of a Vocation

Over twenty years ago, Martine chose to settle on the shores of Port-Leucate to raise oysters. A life choice as much as a professional one, guided by her love of the sea.

"I remember the first time I opened an oyster from our beds. The taste of the lagoon, that perfect salinity mixed with the sweetness of fresh water... I knew I had found my calling."

An Exceptional Terroir

Martine's oyster farm is located in the heart of the Leucate lagoon, between Perpignan and Narbonne. This Mediterranean lagoon offers ideal conditions:

  • Brackish water mixing sea water and fresh water from underground springs
  • Exceptional sunshine with over 300 days per year
  • Natural currents bringing phytoplankton
  • Mild temperatures allowing steady year-round growth
  • Daily Life on the Farm

    Martine's day starts early. At dawn, she heads to the farm to check her beds.

    "Every morning, I look at the lagoon. The colour of the water, the wind direction, the temperature... It all tells me how my oysters are doing."

    On one hectare of beds, Martine produces around 2 tonnes of Pacific oysters per year. Each oyster spends between 18 and 24 months in the lagoon before reaching maturity.

    Martine's Philosophy

    No intensive production, no shortcuts. Martine prioritises quality over quantity.

    "My oysters take the time they need. That's why they have that unique taste, that full flesh and crisp texture."
